Acclaimed Denver brewery opening third location in former church

Cerebral Brewing will team up with Outside Pizza on the former Oasis Brewing spot in northwest Denver.

Less than five months after fully opening a second taproom in Aurora, Cerebral Brewing said Monday that it will open a third location at 3257 Lowell Blvd. in northwest Denver.

The building — a former church — was previously occupied by Oasis Brewing, which closed last December after five years. The high-profile location is just off Highland Square.

Cerebral is teaming up with Outside Pizza in the 4,000-square-foot space, which will feature the brewery’s third metro-area taproom, a second-story mezzanine and a sunny patio.

Outside Pizza, owned by Ashley and Ryan Grillaert, is known for serving Neopolitan-style pies (including the cult-favorite pickle pie) from its vintage green and white trailer at breweries, bars and other locations around town. It will build a pizza kitchen where Oasis Brewing’s equipment used to be, said Cerebral co-founder Sean Buchan. Cerebral won’t brew beer on site.

“We’ve been huge fans of Outside Pizza for years,” Buchan said, adding that Outside has been a regular at Cerebral’s Congress part location on Sundays.

To celebrate, the two businesses — Cerebral is nine years old, while Outside Pizza is three — will host pop-up events on Friday and Saturday, Nov. 22-23, from 11 a.m. to 10 p.m., and on Sunday, Nov. 24, from 11 a.m. to 9 p.m. The taproom will officially open in spring 2025.

Founded in 2015 at 1477 Monroe St., Cerebral Brewing is known for its IPAs (especially the hazy kind), along with barrel-aged stouts, lagers and mixed-fermentation wild and sour ales. It has won numerous awards, including several at the Great American Beer Festival, and frequently lands on local and national lists of the best breweries in Denver.

Cerebral first began expanding in 2021 when it bought a former furniture warehouse at 9990 East Colfax Ave. in order to be able to make more beer with a bigger brewing system. After getting that production online, Buchan opened a temporary taproom in the building before closing it briefly while the full-scale taproom was constructed. It opened last June.
